This delicious soup is warm and comforting and wonderful for digestion!
Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, chopped
- 2 garlic cloves, finely chopped
- 1-inch fresh ginger, finely chopped
- 1 tsp cumin
- ½ tsp turmeric
- ½ tsp paprika
- 5 medium carrots, chopped
- 2 medium green zucchini, chopped
- 3 cups organic vegetable broth
- 15 oz. plant-based milk, unsweetened
- Juice of half of a lemon
- Salt and pepper to taste salt
Directions
Heat oil in a large pot on medium heat, add the onion and cook for 5-7 minutes. Add the garlic, ginger, cumin, turmeric, and paprika, cook 2-3 minutes more, while stirring. Add carrots and zucchini, cook another 5-7 minutes.
Add the vegetable broth and bring to boil, cover and reduce heat to a simmer for 20 minutes. Turn off heat, add coconut milk and lemon juice and stir well. Using an immersion blender, purée the soup until creamy.
