Using Bethenny’s Skinnygirl Balsamic Vinaigrette dressing, you can easily create this savory and healthy salad!
Ingredients
- 1/3 cup pine nuts (can substitute slivered almonds)
- 1/3 cup chopped red onion
- ⅓ cup chopped tomatoes
- 1 pound fresh kale, rinsed and patted dry
- 1/4 cup Skinnygirl Balsamic Vinaigrette
- 1/4 cup grated Vegan parmesan cheese,
- Salt and pepper to taste
Directions
In a salad bowl, add the kale and the dressing. Massage the kale with your hands until soft, about 5 minutes. Add the toppings, toss, and season to taste with salt and pepper and serve!
