This comforting soup is not only easy and delicious but it’s packed with vitamins and antioxidants such as vitamins b6, c, and selenium.
Ingredients
- 2 tbs olive oil
- 1 large white onion, diced
- 5 cloves garlic, minced
- 2 lbs. Tomatoes cut into quarters
- 1 cup fresh basil leaves
- ½ tsp dried oregano
- 2 cups organic vegetable broth
- Salt + pepper, to taste
Directions
In a large pan, heat oil over medium heat, sauté the onion for 5-7 minutes, add the garlic and cook 1-2 minutes. Add the tomatoes, basil, oregano, salt and pepper, and vegetable broth and bring to a boil. Cover and reduce heat for 15 minutes.
Turn the stove off and let it rest for 10 minutes. Using an immersion blender, blend the soup until smooth and serve hot.
