This vegan spin on a classic favorite is both healthy and delicious!

Ingredients

  • Corn tortillas
  • Guacamole
  • Cilantro
  • Arugula
  • Roasted cauliflower
  • Black beans
  • Salsa
  • Vegan cheese

Directions

Toast your tortillas over an open flame until they are lightly browned, spread your guacamole on the tortilla, then add cilantro and arugula, then a piece or two of roasted cauliflower, and give it a little mash. Top with black beans, salsa, and some vegan cheese. Enjoy!
