Bethenny’s Supermodel Cauliflower Cheesy Grits Are the Ultimate Comfort Food

Bethenny’s Supermodel Cauliflower Cheesy Grits Are the Ultimate Comfort Food

If you thought grits were only for Southern Sunday brunches, Bethenny just gave this humble standby a major glow-up. Her Supermodel Cauliflower Cheesy Grits recipe is exactly what every busy home cook needs right now: cheesy and indulgent enough to satisfy your comfort-food cravings, but also light and surprisingly elegant. Bethenny teased the recipe on her Instagram saying “no regrits—these cauliflower cheesy grits are insane,” and honestly, that’s all we needed to hear.

This version swaps traditional stone-ground grits for finely grated cauliflower, a smart move that trims the carbs without cutting the creaminess. Think silky, savory bites of cauliflower purée that feel decadent thanks to a blend of parmesan cheese, all brought together with a touch of spice. It’s one of those recipes that feels gourmet but is doable with everyday ingredients you likely already have in your fridge.

Whether you’re serving it under a runny egg for breakfast, alongside roasted chicken for dinner, or as a cheeky indulgence on movie night, these cheesy cauliflower grits are comfort food with a modern twist. Bethenny’s take is proof that eating lighter doesn’t have to mean flavor sacrifice—it can be bold, cheesy, and downright irresistible.

Ingredients

  • Frozen rice cauliflower (12 oz)
  • Finely crushed red pepper or paprika
  • Parmesan cheese powder; Bethenny uses a mac and cheese packet (or cheese topping of choice)
  • Salt and pepper, for taste

Instructions

  1. Steam frozen rice cauliflower.
  2. Season with salt and pepper as desired—no need to add water.
  3. Add some finely crushed red pepper depending on desired spice level.
  4. Add parmesan cheese powder. Bethenny uses Banza cheese packets.
  5. Throw in a chunk of butter.
  6. Mix thoroughly until silky and melted.
