Ever considered going vegan? While Bethenny is not always vegan, she enjoys a vegan menu when she has just undergone a juice cleanse and / or when she is trying to detox a little. For Bethenny, it’s a good transition out of a cleanse and a good way to see what foods she might be intolerant to. Towards the 5th and 6th days, Bethenny started to notice her nasal congestion clearing up, among other benefits. We asked Bethenny to share her day-by-day menu when she adopts a vegan lifestyle.
Bethenny’s Vegan 7-Day Menu
Side note: You will see some juices appearing in this menu. Bethenny frequently purchases juices, but homemade juices are just as good. Here is her simple green juice recipe.
Day 1
Big salad with baby kale, quinoa, corn, and tomato with Skinnygirl salad dressing – sub in any of your favorite vegetables that you have in your fridge. As Bethenny likes to say, use what you have!
Vegan burger (on this particular day, Bethenny had Beyond Burger but there are many great choices) with avocado.
‘Love Me’ cold pressed juice from Juice Press (green apple, spinach, kale, and lemon) – you can also make this at home with these ingredients, and add anything else you like. Bethenny likes to add 1 sweet element to her green juices when she’s getting tired of the pure greens.
Celery juice – celery contains powerful anti-oxidants and cancer-fighting compounds. It also helps to activate the gut, is an anti-inflammatory, and aids liver function – among many other benefits.
Dark chocolate vegan sorbet – needed something sweet after lunch.
Mexican restaurant: corn chips and a raw salad with greens, corn, beans, grains and nuts. Bethenny shows us how to make a “use what you have” salad here – sub out the eggs for nuts, seeds, or legumes for vegan protein.
Coconut popsicle – Bethenny keeps coconut popsicles in her freezer like these.
Glass of organic wine.
Day 2
Matcha almond milk latte. Bethenny picked hers up from a local coffee shop but if you have a milk frother at home (like this one) you can easily make it yourself with matcha powder – that way it’s also easier to control how much sweetener you add and how strong you make it.

Salad with arugula, avocado and tomatoes, dressed with Skinnygirl Balsamic Vinaigrette.
Whole Foods veggie meatballs.
Apple, beet (known to promote liver health), apple cider vinegar juice from the local juice bar (Bethenny’s local juice bar is Meli-Melo in Greenwich, CT). You can pick up a similar juice at Whole Foods (beet, orange, carrot), your local juice bar if there is one in your area, or make it at home.
Chinese restaurant: Mu Shu Vegetables with tofu (great healthier option at a Chinese restaurant).
Glass of Forever Young rosé wine.
Day 3
Matcha almond milk latte.
‘Clean Green Protein Smoothie’ from Juice Press. Sometimes it’s easier to stock up on a few juices from a juice bar, but you can easily replicate these at home with store bought ingredients – spinach, kale, plant protein, flaxseed, chia, almond butter, banana, coconut nectar, almond milk. Ask them to leave out the almond butter to make it less thick and easier to digest, or make it at home.
Leftover Mu Shu Vegetables with tofu.
Evolution Fresh Organic Super Fruit Greens Cold Pressed Juice (orange, mango, pineapple, cucumber, spinach romaine, kale) purchased at Starbucks.
Broccoli sautéed simply in olive oil with a little bit of garlic – add some hot pepper flakes for a kick.
Pureed butternut squash soup with a few simple ingredients: onions, vegetable stock, cubed butternut squash, salt and pepper – bring to a boil then simmer until the squash is tender. Puree with a regular or immersion blender. Watch this video of a similar recipe here.

Day 4
Smoothie bowl from local breakfast spot (Meli-Melo in Greenwich, CT) with açaí smoothie, homemade granola, banana, raspberries, blueberries. This is very easy to recreate at home in your blender with fresh or frozen fruit, smoothie packs like these, and made it even healthier by using your own nuts and seeds blend instead of store-bought granola. Or, use store bought granola! Our team loves Purely Elizabeth Blueberry Hemp granola.
Beet juice from Whole Foods (beet, orange, carrot) – again, easy to pick up at your local juice bar if there is one in your area, or make it at home.
Salad with lentils, avocado, tomatoes and corn, dressed with Skinnygirl Honey Dijon Dressing.
Veggie burger on a sprouted grain English muffin. Why “sprouted”? This is a great article describing the whole “sprouted” grains phenomenon and potential health benefits. Sometimes Bethenny likes to add avocado to her veggie burger.
Kale salad with black beans (for protein and fiber) dressed with lemon juice and olive oil, salt and pepper.
Vegan ice cream (like this one, available at many supermarkets) and chocolate chips – use what you have, but here is a vegan version.
Bowl of air-popped chips to scratch that salty snack itch.
Suja Organic Uber Greens Cold-Pressed Juice purchased on Amazon. Contains essentially an entire organic salad in a bottle: organic cucumber juice (diuretic), organic celery juice (diuretic), organic grapefruit juice (vitamin C), organic green chard juice, organic green leaf lettuce juice, organic lemon juice, organic kale juice, organic spinach juice, organic parsley juice, etc.

Day 6
Remedy Organics Cacao Essentials smoothie purchased on Amazon – this one contains almond milk, peruvian cacao, dates, ashwagandha, maca, and prebiotics. It is nutrient dense and filling, and scratches that chocolate itch without a lot of sugar. Try saying ashwagandha ten times. Or, learn more about it here.

Simple baked potato and sushi with avocado and cucumbers.
Bowl of lentils – simple but filling. These are ready to eat for when you are in a rush and want something quick.
Vegan donut purchased at a local donut shop. Make your own at home!

Suja Organic Carrot Orange Cold Pressed Juice purchased on Amazon, containing carrots, orange, pineapple and lemon. Carrots provide beta carotene, fiber, vitamin K1, potassium, and antioxidants and are linked to good eye health.
Simple baked potato.
Watermelon.
Broccoli sautéed simply in olive oil with a little bit of garlic – add some hot pepper flakes for a kick.
Kombucha.
Vegan chicken nuggets with cauliflower & sweet potato tots like these from Green Giant.
