A good day starts with a healthy breakfast. Follow the recipe below to recreate the Skinnygirl Jam Bars as seen on Episode 6 of The Big Shot with Bethenny. Bethenny uses our Skinnygirl preserves but you can use any jam or preserves you want to create this lightly sweet treat.
Directions:
Step 1 – THE MIXTURE
In a food processor bowl with a blade attached, add flour, brown sugar, baking powder, and salt. Pulse to combine. Add in oats, walnuts and cubed butter. Process until mixture is crumbly.
Spray cake pan with cooking spray and line with parchment so two flaps hang over the edge of the pan.
Sprinkle half the mixture in the prepared pan. Press down firmly to form crust. Spread the entire amount of jam onto the crust. Top with remaining crumb mixture and press down lightly.
Step 2 – THE BAKING
Preheat the oven to 350° degrees F. Bake in the oven for 30 minutes, or until the top is golden brown. Remove from the oven and allow to cool completely.
Step 3 – THE ASSEMBLY
Cut jam bars into squares.
