This delicious soup is a great way to get fiber and antioxidants in!

Ingredients

  • ¼ cup vegan butter
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 large head cauliflower, cut into florets
  • 2-3 sprigs of fresh thyme
  • 4 cups organic vegetable broth
  • 1 cup plain plant-based milk of choice, unsweetened
  • ¼ cup lemon juice
  • Salt and pepper to taste

Directions

In a large pan, heat the butter over medium heat, add the onion, and sauté for 4-6 minutes. Add the garlic and cook for 1 minute. Add the cauliflower, thyme, salt and pepper, and broth.

Bring the soup to a boil, cover, reduce heat, and simmer, stirring occasionally, for 15-20 minutes.

Stir in the milk and lemon. Turn the heat off and let the soup sit for 10 minutes to cool. Using an immersion blender, puree the soup until smooth and creamy.
