This quick and easy recipe really takes leftover pizza to a new level! It also gives you some protein and greens on a delicious pizza base!
Ingredients
- Leftover pizza
- Egg
- Salt and Pepper
- Arugula
- Olive oil
- Parmesan
Directions
Add one slice of leftover pizza to a non-stick frying pan and heat through. In a small bowl crack one egg and add it to a non-stick frying pan, season with salt and pepper, cover with a lid… do not flip the egg, let it cook to a perfect over-easy!
Plate your pizza and add the egg on top. Then top with arugula, a drizzle of olive oil, more salt and pepper, and grated parmesan cheese. Enjoy!
