As we all know, Bethenny loves summer and hanging by the pool or on the beach in her swimsuit. She also loves a delicious, light, refreshing popsicle, made with her own Skinnygirl Blackberry Mule Preserves. This recipe is so easy and packed with protein from the chia seeds and yogurt. Perfect for these last few weeks of summer!

Ingredients
- 2 cups coconut water
- ½ cup Skinnygirl™ sugar-free Cocktail Inspired Preserves – Blackberry Mule
- ½ cup Greek nonfat vanilla yogurt
- 1 tablespoon fresh lime juice
- 1 tablespoon chia seeds
- Eight 4-ounce ice-pop molds
Directions
Add coconut water, Skinnygirl Preserves, yogurt, and lime juice to blender and process until smooth. Add chia seeds and blend 10 seconds.
Pour into ice-pop molds, insert sticks, and freeze until solid, at least 3 hours.
Run under hot water for several seconds to unmold.
