Craving something crispy, spicy, and delicious? Quickly whip up these easy, vegan, and healthy tofu vegetable wraps!

Ingredients

  • Roasted red pepper purée
  • Tofu
  • Spinach
  • Tomatoes
  • Avocado
  • Fried onions
  • Chopped almonds
  • Seaweed seasoning
  • Nori wrap

Directions

Purée roasted red peppers in a small bowl with an immersion blender, or use your favorite red pepper purée. Cube tofu prepared in your favorite way and set aside. Spread your red pepper purée on a nori wrap and place the cubed tofu on the wrap.

In a medium bowl toss spinach, tomatoes, and avocado in a light dressing. Layer this mixture on top of the tofu.

Sprinkle fried onions, chopped almonds, and seaweed seasoning on top, and roll the wrap. Cut in half and place on a plate with soy sauce. Garnish with another sprinkle of seaweed seasoning and enjoy!
