This chili is a great vegan take on a classic comfort meal, it is packed with veggies and great ingredients!
Ingredients
- Olive oil
- 1 chopped medium onion
- 2 teaspoons chili powder
- 2 teaspoons cumin
- Salt to taste
- 2 cloves minced garlic
- 1 chopped red pepper
- 2 small cans pureed tomatoes
- 1 chopped zucchini
- 1 can pinto beans
Directions
- Heat oil in pot
- Add onions, cook until translucent
- Add the rest of the ingredients and simmer for 45 minutes
