This chili is a great vegan take on a classic comfort meal, it is packed with veggies and great ingredients!

Ingredients

  • Olive oil
  • 1 chopped medium onion
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • Salt to taste
  • 2 cloves minced garlic
  • 1 chopped red pepper
  • 2 small cans pureed tomatoes
  • 1 chopped zucchini
  • 1 can pinto beans

Directions

  • Heat oil in pot
  • Add onions, cook until translucent
  • Add the rest of the ingredients and simmer for 45 minutes
