This sandwich is light but very satisfying, it will keep you full all afternoon!

Ingredients

  • Seasoned Mayo:
    • ½ cup vegan mayonnaise
    • 2 tbs lemon juice
    • 1 teaspoon dijon mustard
    • 1 tbs chives finely chopped
    • 1 tbs parsley finely chopped
    • 1 tbs dill finely chopped
  • Sandwich:
    • 1/2 large cucumber sliced thick
    • 1-2 slices sprouted grain bread, toasted
    • ½ avocado sliced thick
    • Salt to taste
    • A bunch of baby spinach, green leaf lettuce and fresh sprouts washed

Directions

Combine the mayo, lemon juice, salt, and dijon mustard in a bowl and stir well. Add in the chives, parsley, and dill. Cover and refrigerate for 20 minutes. Spread the mayo on bread, pile high with cucumber, avocado and greens and enjoy.
