Using Bethenny’s Skinnygirl Honey Dijon Vinaigrette, you can make this protein packed salad!

Ingredients

  • 1/3 cup pine nuts (can substitute slivered almonds)
  • 1/3 cup chopped red onion
  • 1 pound fresh kale, rinsed and patted dry
  • 1/4 cup Skinnygirl Honey Dijon Vinaigrette
  • 1 cup diced solid tofu
  • Salt and pepper to taste

Directions

In a salad bowl, add the kale and the dressing. Massage the kale with your hands until soft, about 5 minutes. Add the toppings, toss, and season to taste with salt and pepper and serve!
