Ginger Carrot Pureed Soup

Ginger Carrot Pureed Soup

This delicious soup is warm and comforting and wonderful for digestion!

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 garlic cloves, finely chopped
  • 1-inch fresh ginger, finely chopped
  • 1 tsp cumin
  • ½ tsp turmeric
  • ½ tsp paprika
  • 5 medium carrots, chopped
  • 2 medium green zucchini, chopped
  • 3 cups organic vegetable broth
  • 15 oz. plant-based milk, unsweetened
  • Juice of half of a lemon
  • Salt and pepper to taste salt

Directions

Heat oil in a large pot on medium heat, add the onion and cook for 5-7 minutes. Add the garlic, ginger, cumin, turmeric, and paprika, cook 2-3 minutes more, while stirring. Add carrots and zucchini, cook another 5-7 minutes.

Add the vegetable broth and bring to boil, cover and reduce heat to a simmer for 20 minutes. Turn off heat, add coconut milk and lemon juice and stir well. Using an immersion blender, purée the soup until creamy.
