But as she kicked off her self-proclaimed "supermodel era" earlier this year, she got creative in the kitchen, throwing together weirdo snacks that were quick, healthy, and—most importantly—tasted good. Because who actually wants to spend forever on meal prep?

This one falls right in line with her Naturally Thin mindset. Years ago, Bethenny challenged diet culture with a book that helped people tune out the food noise—that nonstop mental chatter about being “good” or “bad” based on what you eat. This isn’t about rules or restriction. It’s just a protein-packed snack that feels good and tastes even better, and it's beyond simple to make.

Think sandwich vibes, but ditch the bread. (Though it would taste amazing paired with a cottage cheese bagel.) Bethenny uses juicy slices of a perfectly ripe beefsteak tomato (never refrigerated, trust mother), layers on organic shaved turkey (and yes, it must be shaved—texture matters, people!), and finishes it off with her secret sauce: cottage cheese mixed with Dijon mustard. But make sure it's Grey Poupon, or as Bethenny says, "don’t bother." Top it off with everything bagel seasoning and some fresh basil or arugula if you're feeling fancy.

Ingredients:

  • 1 large ripe tomato (beefsteak-style is best), unrefrigerated
  • 2–3 slices organic shaved turkey
  • 1 heaping tablespoon cottage cheese
  • 1 teaspoon Dijon mustard (Grey Poupon or don’t bother)
  • Everything bagel seasoning
  • Optional: fresh basil or arugula

Instructions:

  1. Slice the tomato into thick rounds and place on a plate.
  2. Layer shaved turkey on top (yes, it has to be shaved).
  3. In a small bowl, mix cottage cheese with Dijon. Use more cottage cheese than mustard unless you like it strong.
  4. Spoon the mixture over each stack.
  5. Top with everything seasoning. Add basil or arugula if you want to feel fancy.
  6. Eat immediately, preferably standing up.
